Inspired by Azgarehta the Bard telling me he was going to bring bananas to Freeze Your Flanks Off, the Lyonesse wintertime feast. Enjoy!
Banana-Nana Cake NOTE: FOR A DOUBLE-LAYER CAKE, DOUBLE THIS RECIPE 1 (14-oz.) pkg. Pillsbury Banana Quick Bread and Muffin Mix 1 cup buttermilk 1/4 cup oil 3 tablespoons maple syrup 1/2 teaspoon genuine vanilla 2 eggs (OPTIONAL) 1/2 cup finely chopped walnuts (--I did NOT use this. I don't like walnuts.)
Banana Mix -- for center of cake, if a two-layer cake: 1/8 cup sugar 1/3 teaspoon genuine vanilla Lightly puree two bananas (so mixture is still chunky), add 1/8 cup sugar and 1/3 teaspoon of genuine vanilla. Stir and add to middle of two-layer cake, or use as a natural low-sugar frosting.
Frosting - my cake had milk chocolate store-bought icing Decorations - thinly slice a banana and make a smiley face on top for extra fun.
1. Heat oven to 400'F. Grease the inside of a round 9-inch pan. Combine all ingredients (except optional walnuts); stir 50 - 75 strokes with a spoon until mix is moistened. (Optional) Stir in walnuts. Pour batter into pan.
2. Bake at 400'F for 16 to 20 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely.
3. Frost and decorate cake.
